If there was one thing I would have liked with my wedding, it would be video. Skipping it back then was acceptable. In this age of youtube and Google Video, a professional video is now expected in many cases. You may be able to have a friend video an outdoor ceremony and get away with it, but if there are any difficult lighting situations (reception or afternoon sun, etc.) you will want a professional.
